Southern salad satisfies for special events
->It is high season for weddings, engagements, bridal luncheons and baby showers. Be the proper Southern lady, I have to put my beads, brush my hair, and come with a smile on my face and a gift in my hand.
I, in secret, wanting to crawl out the nearest window, but there is always something that keeps me coming back for more. It's good food, and lots of it. The crowd-ladies who lunch do not joke when it comes to hosting a swell. Knorr spinach dip, chicken salad sandwiches and ambrosia are guaranteed to make an appearance mandatory. (Hey, no complaints here.)
One of my all time favorite salad is the West Indies. It is the ultimate ladies lunch. The spicy crab salad was concocted in Mobile, Alabama, by Chief Bill Bayley in 1947. For years, the recipe remains a closely guarded secret until it was later exposed in a Junior League cookbook Mobile. Once revealed, the popularity of the recipe in the South spread like wildfire. And why not? It is lightweight, easy to prepare in advance and always a crowd-pleaser.

West Indies Salad
1 pound (16 ounces) fresh lump crab meat 1 small sweet onion, finely chopped 1 / 2 cup canola oil 1 / 3 cup cider vinegar teaspoon salt 1 / 2 pinch of freshly ground black pepper cayenne pepper (optional) 1 / 2 cup ice cold butter lettuce water, saltines to serve, to serve as lemons and oranges into slices, for garnish, optionalHalf of the dispersion of chopped onion in bottom of serving bowl. Add half the crab meat. Layer the remaining onion followed by the remaining crab meat.
Combine canola oil, cider vinegar, salt, pepper and cayenne and whisk well. Pour dressing over crab meat and onions, followed by ice water. Press mixture gently with a spoon. Cover and refrigerate for 2 hours or up to 24 hours.
Serve on a pile of lettuce with butter crackers. Garnish with lemon and orange slices, if desired.
Makes 4 to 6 servings.
